Eggplant parmigiana



Ingredients:

1 or 2 eggplants
4 eggs
2 cups bread crumbs
1 Tablespoon dried parsley
1 teaspoon garlic powder
1 cup romano cheese
all purpose flour
1 quart or liter of marinara sauce
1 pound mozzarella cheese slices
1/2 cup (or more) romano cheese for assembly

Bake 350F for 35 minutes
