Ingredients:
4 large roma tomatoes
handful of cilantro
part of a jalapeño
salt
1/4 to 1/2 of an onion
1 clove of garlic
2 corn tortillas
2 eggs
queso fresco (Mexican Fresh Cheese)
refried beans if desired (I always mix a little sour cream into the canned beans)
Olive Oil, Lard or Butter for frying
You can add the onions and garlic to the blender, instead of cooking them separately.
The sauce is actually enough for 4 eggs, so I fixed two more eggs the next morning for myself, just had to warm the sauce back up.
This is one of the best dishes that I have made in a while, just my opinion.
